costing of menus

Maintain comprehensive product
knowledge including ingredients, equipment, suppliers, markets, and current
trends and make recommendations for appropriate adjustments to kitchen
operations accordingly

Assists in co-coordinating the
preparation of the departmental annual budget
辅助完成部门年度预算准备工作

Controls and monitors
departmental costs on an ongoing basis to ensure performance against budget

Provides direction to the
Kitchen helpers, including Cooks, Kitchen Attendants and Stewards
