To assist management in running the outlet ensuring maximum guest satisfaction, consistent standards, through planning, organizing,
directing, and controlling the wine operation and administration.

Key Duties and Responsibilities:

▪ Completely understand and maintain all policies, procedures, standards, specifications, guidelines and training programs.

▪ Achieve company objectives in sales, service, quality, appearance and sanitation of the establishment through the training of
employees’ whist maintaining a positive and productive working environment.

▪ To ensures that all colleagues activities adhere to and support the Atlantis Quality Standards

▪ Conducts regular team briefings and meetings.

▪ Consistency monitors of wine being served and service quality, escalating any major problems/complaints to Management.

▪ Actively promotes the use of up selling techniques within outlet to exceed guest expectations and increase revenue.

▪ Provides specialist advice to customers and colleagues on food and beverages, wine paring when required.

▪ Monitors all aspects of wine and related operational equipment’s quality and hygiene and takes immediate corrective action when
required.

▪ Actively seeks and reviews customer feedback in regard to food quality, service and overall satisfaction and takes appropriate and
timely action.

▪ Understanding of health and safety requirements and managing employee behavior in accordance with the regulations.

▪ To ensure all deliveries are checked in correctly and that all relevant delivery dockets/ invoices are correct.

▪ Monitor storage’s Variances & Spoilages.

▪ To complete all the necessary variance and spoilage report.

▪ To ensure that all services delivered within the restaurant ‘s operation are being charged correctly.

▪ Ensure that all new staff in the restaurants receive proper training until they are fully aware of company standards.

▪ Be informed and aware of all relevant legislation regarding service of wine, the sale of tobacco, opening hours, etc

▪ To regularly price check all wine items from Simphony to menu and seek if there are any discrepancies.

▪ Set-up of the outlet in accordance with the pre-determined standards of the operation.

▪ Detailed knowledge of the full bar and wine menu, and able to give comprehensive descriptions of wine and spirits list.

▪ Ensure that the selection process for applicants is compliant with company procedures.

▪ Responsible for on boarding, training and integration of new starters.
