【岗位职责】
1、建立并管理一个高效的厨房团队、监督所有中西厨房的出品。
2、充分理解并严格遵守酒店的规章制度,例如消防,卫生检疫以及健康安全等。
3、监督所有供应食品的质量与数量。
4、监督各厨房收到的食品的质量与数量。
5、将相关信息传达给行政总厨。
6、经常检查厨房设备,做好维护工作。
7、保证每日售货柜台上,自助餐上以及宴会上的食品陈列引人入胜。
8、确保所有直接面对客人的员工对于食品以及其制作工艺有充分的认识。
9、与各部门建立良好的联系。
10、确保员工执行正确的卫生程序,检查和控制所有相关政策,协助厨房卫生医生 监控国家规定的执行情况。
11、参与菜单计划,推荐新菜,并联系组织所有相关厨房和餐厅执行新菜的推出。
12、负责做好所有促销和活动的纪录,书写和计算菜谱包括菜肴的照片.
【 Job Responsibilities
1. Establish and manage an efficient kitchen team and supervise the output of all Chinese and Western kitchens.
2. Fully understand and strictly abide by the hotel's rules and regulations, such as fire protection, health quarantine, and health safety, etc.
3. Supervise the quality and quantity of all supplied food.
4. Supervise the quality and quantity of food received by each kitchen.
5. Convey the relevant information to the executive chef.
6. Regularly inspect kitchen equipment and do a good job in maintenance.
7. Ensure that the food display at the sales counter, buffet and banquet every day is eye-catching.
8. Ensure that all employees who directly interact with guests have a thorough understanding of the food and its production techniques.
9. Establish good communication with all departments.
10. Ensure that employees follow the correct hygiene procedures, review and control all relevant policies, and assist kitchen hygieners in monitoring the implementation of national regulations.
11. Participate in menu planning, recommend new dishes, and contact and organize all relevant kitchens and restaurants to implement the launch of new dishes.
12. Be responsible for keeping records of all promotions and activities, writing and calculating recipes including photos of dishes.
