MAJOR FUNCTION 主要职能:
The Western Executive Sous Chef is responsiblefor the operations of all the kitchens and the delivery of the highest standardof food quality as per the Marriott local standards and procedures.
西餐行政副总厨的职责是负责所有西餐厨房的运作,确保所有食品按照万豪标准和程序的高标准,高质量出品。
Ensures that all food in the hotel, whether cookedor uncooked is consistent in terms of quality, taste and presentation as set byhim. Ensures preparation of food produce superior meals within budgetparameters, which will result in a profitable food operation. He plans meals,supervises and coordinates the work of chefs, cooks and other kitchenassociates. He is also to be familiar with competitive operations with regardsto pricing, quality and merchandising. He assists the DOFB in the day-to-dayF&B operations and represents him, as and when required, with all itsresponsibilities.
确保酒店内食品,成品或半成品保持一贯质量、口味及外观。在预算范围内提供高质量食品并保证利润。计划出品并管理、协调主厨、厨师及其他厨房员工的工作。同时也要关注竞争对手的食品、价格及质量。协助餐饮总监管理餐饮部的日常运作,在需要时,担当其职责。
He is responsible for the efficient and successfuloperation of the western kitchens. He controls,checks and supervises the kitchen operations and works hands on as and whenneeded. He assumes the responsibility for training related functions of all hisstaff.

JOB SPECIFICATION职位要求:
Must have a goodknowledge and understanding of Western and basic Asian cuisines.
必须熟知西餐食品及基本的亚洲菜系。
Must be ‘hands on’and able to practice and demonstrate excellent technical kitchen skills.
熟练及出色的技能。
Must have theability and motivation to create new dishes and establish effective standardsfor all food production and presentation.
必须有足够的能力创建新的菜肴并对食品的出品及展示作出适当的标准。
Must be a goodtrainer.

At least has 5years kitchen experience in 5 star hotel at supervisory level, with a minimumof 3 years as Western Chef.
至少5年以上五星酒店主管级,及3年以上西厨厨师长的工作经验。
Good command ofWritten and Spoken Mandarin
流利的普通话。
Good English skills(written & verbal).
良好的英语口译及书写能力。
Preferred -completed technical education in hospitality or culinary school.
专业的厨师及技术服务学校毕业优先。
Training skills andleadership.
培训技巧及领导技能。
With a verypro-active and positive attitude to work, and demonstrate flexibility.
积极主动的工作态度及很强的适应能力。
