Cold Kitchen Chef De Partie 冻厨厨师主管Duties and Responsibilities – 工作职责・Supervise and participate in the production of all western cold cuts and cold dishes; strictly follow hygiene standards and safe production specifications to guarantee consistent food quality
・统筹并参与各类西式冷荤、冷菜制作,严格执行卫生规范与安全生产要求,把控菜品出品质量
・Enforce standardized work procedures for cold kitchen; properly store all cold dish raw materials, optimize ingredient usage and reduce food consumption costs
・严格落实冻厨全套作业流程,规范冷菜原料仓储管理,合理管控食材损耗,降低运营成本
・Take charge of regular disinfection of cold kitchen dedicated tools, chopping boards and food containers; maintain thorough cleanliness and sanitation of freezers, ovens and all section equipment
・负责冻厨专用工具、砧板、容器的每日消毒,保持冰柜、烤箱等设备洁净卫生
・Count daily post-service raw material consumption, submit requisitions and replenish inventory materials in a timely manner
・每日收档核对原料消耗,及时提交申购并完成物料补充
・Uphold kitchen-wide sanitation and personal hygiene standards; conduct routine inspection to ensure all kitchen equipment operates normally
・维护后厨整体环境卫生与个人卫生,巡检设备状态,保障厨具正常运转
・Coordinate with Food Safety Inspection team for spot checks, dish sampling, retention and laboratory testing; fully safeguard food safety for all hotel guests
・配合食品检验部门完成菜品抽查、留样及送检工作,全面保障宾客用餐安全
・Act as official representative of the hotel, brand and company to communicate professionally with guests, internal staff and third-party personnel
・能够代表酒店、品牌及公司,与顾客、内部员工、第三方开展专业对接沟通
・Master the full range of western cuisine cooking and cold kitchen production techniques
・熟练掌握全套西餐烹饪及冷菜制作工艺Job Requirements – 任职要求・Physically fit, able to endure long-hour kitchen work and hard-working
・身体健康,适应后厨高强度工作,吃苦耐劳
・Possess strong capabilities including on-site problem solving, logical analysis, team coordination, staff organization and on-job training
・具备现场问题处理、逻辑判断、团队统筹、人员组织及员工培训能力
・Hold valid vocational qualification certificates in catering or relevant culinary majors
・持有餐饮行业或烹饪相关专业职业资格证书
・Solid years of hands-on working experience in hotel cold kitchen; or equivalent academic background paired with relevant cold food production experience
・拥有多年酒店冷菜实操工作经验,或同等相关专业学历搭配对应冻厨从业经验
