工作职责:
协助厨师长和主厨进行食材的采购计划制定,根据餐厅的菜单需求和客流量,提出合理的食材采购建议。负责食材的验收工作,检查食材的新鲜度、质量和数量是否符合要求,对不合格的食材及时进行退换处理。对食材进行清洗、去皮、切割、腌制等初步加工处理,确保食材干净、卫生、易于烹饪。按照规定的储存方法和要求,将食材妥善存放于冰箱、仓库等储存区域,防止食材变质和浪费。在厨师长和主厨的指导下,协助进行菜肴的烹饪工作,确保菜肴的口感和质量。掌握各种烹饪设备的使用方法和操作规程,如炉灶、烤箱、蒸锅等,确保设备的安全运行。负责烹饪过程中的调料添加和调味工作,根据菜肴的口味要求,准确掌握调料的用量和比例协助厨师长和主厨进行菜肴的摆盘和装饰工作,提高菜肴的美观度和吸引力。负责厨房的清洁工作,包括炉灶、工作台、地面、墙壁等区域的清洁,保持厨房的整洁和卫生。定期对厨房设备进行清洁和维护,确保设备的正常运行和使用寿命。严格遵守食品安全卫生制度,确保食材的储存、加工和烹饪过程符合卫生标准,防止食品污染和食物中毒。协助厨师长进行厨房的安全管理工作,如检查燃气、电器等设备的安全状况,防止火灾和其他安全事故的发生。完成厨师长和主厨交办的其他工作任务,积极配合餐厅的整体运营和管理。
