【岗位职责】
1、全面负责西厨房日常运营管理,包括菜品研发、菜单设计、成本控制及出品质量把控
2、制定标准化操作流程,监督执行食品安全与卫生管理制度
3、合理排班并管理西厨团队,组织专业技能培训,提升团队操作规范性与工作效率
4、核算食材成本,优化库存管理,定期分析菜品销售数据并提出改进方案
5、协调宴会及VIP客人的特殊餐饮需求,主导特色主题餐会的菜品设计与执行
1. Fully responsible for the daily operations management of the Western kitchen, including dish development, menu design, cost control, and product quality supervision.
2. Establish standardized operating procedures and supervise the implementation of food safety and hygiene management systems.
3. Arrange reasonable work shifts and manage the Western kitchen team, organize professional skills training to improve team operational standards and work efficiency.
4. Accurately calculate ingredient costs, optimize inventory management, regularly analyze dish sales data, and propose improvement plans.
5. Coordinate special catering needs for banquets and VIP guests, and lead the design and execution of dishes for special themed dining events.
【岗位要求】
1、具备西餐烹饪专业资质(如西式烹调师资格证优先)
2、熟悉高端酒店西厨房运作模式,能独立设计零点菜单及宴会菜单
3、精通厨房设备使用维护,了解进口食材特性及采购渠道,具备成本管控实战经验
4、具备优秀的团队管理能力
1. Possess professional qualifications in Western cuisine (such as a Western Cook Certificate preferred)
2. Familiar with the operation of high-end hotel Western kitchens, able to independently design à la carte menus and banquet menus
