职责概述
GENERAL MISSION
在饼房主管或副厨师长的领导下,负责带领一个班次(如早班/晚班、甜点组/面包组)高效完成每日生产任务。确保本班次内产品按标准出品、工作区域整洁、设备使用规范,并为饼房厨师提供操作指导。
Under the direction of the Pastry Supervisor or Assistant Pastry Chef, lead a team (e.g., morning/evening shift, dessert/bread section) to efficiently complete daily production tasks. Ensure products are output according to standards, the work area is kept tidy, equipment is used properly during the shift, and provide operational guidance to junior staff.
工作职责
RESPONSIBILITIES AND MEANS
带领并参与本班次甜点/面包/巧克力的具体制作,确保按时、按量、按质完成。
Lead and participate in the specific production of desserts/breads/chocolates for the shift according to the supervisor's production plan, ensuring timely completion with correct quantity and quality.
检查本班次负责产品的出品质量、口感、外观及分量,确保符合既定配方与标准。
Inspect the quality, taste, presentation, and portion size of products under the shift's responsibility to ensure compliance with established recipes and standards.
负责本班次工作区域(包括操作台、设备、工具)的清洁卫生,监督组员遵守个人卫生及食品安全规范。
Be responsible for the cleanliness and hygiene of the work area (including workbenches, equipment, tools) during the shift, and supervise team members' adherence to personal hygiene and food safety regulations.
正确使用并保养本班次所用设备(如烤箱、搅拌机、巧克力调温机),进行常规检查,发现异常及时上报。
Operate and perform basic maintenance on equipment used during the shift (e.g., ovens, mixers, chocolate tempering machines), conduct routine checks, and report any abnormalities promptly.
协助主管进行原料的领取、核对与妥善存放,控制本班次原料使用,减少浪费。
Assist the supervisor in receiving, checking, and properly storing raw materials, control ingredient usage during the shift, and minimize waste.
指导并培训新员工掌握基本操作技能与标准流程。
Guide and train new or junior staff in basic operational skills and standard procedures.
熟知食品添加剂的的使用方法。
Familiar with the use of food additives.
完成上级交代的其他任务。
Complete other tasks assigned by your supervisor.
