西厨行政副总厨是西厨房的行政副主管,协助行政总厨主持西厨房的整体工作。行政副总厨要严格按照酒店的规章制度和部门的工作程序,组织、协调、指挥部门员工开展日常工作,确保各厨房都能提供优质出品,把握控制好各厨房的成本及损耗。西厨行政副总厨应具有较高的西餐烹调技术、良好的管理、组织、指挥能力和熟悉厨房生产设备的使用方法。西厨行政副总厨的工作直接向西厨行政总厨负责。
The Executive Chef of the West Kitchen is the executive deputy director of the West Kitchen, assisting the Executive Chef in hosting the overall work of the West Kitchen. The executive deputy chef must organize, coordinate, and direct departmental staff to carry out daily work in strict accordance with the hotel's rules and regulations and departmental work procedures, to ensure that all kitchens can provide quality products, and control the cost and loss of each kitchen. The Executive Chef of Western Kitchen should have a high Western cooking technique, good management, organization, command ability and familiarity with the use of kitchen production equipment. The work of the Executive Chef of the Western Kitchen is directly responsible to the Executive Chef of the West Kitchen.
