后厨运营管理 协助厨师长管理日常厨房运作;监督食品制备全过程的质量;监测收货的食品质量和数量。菜品质量与研发 熟练掌握粤菜烹饪技巧,深入了解食材特性;协助制定菜单及食品节;积极开创新菜,研究当地餐饮市场。团队管理与培训 协助对厨房各岗位人员培训;检查、考评各岗位的工作;帮助下属提高技能并为他们的职业发展提供支持。成本与安全管理 控制食品出产的标准,控制厨师按照配料卡标准及程序准备食品;懂得成本核算,食物原料及食品营养知识;对酒店食品卫生、安全及食品质量负责。Back-of-house operation management: Assist the chef supervisor in managing the daily kitchen operations; supervise the quality of the entire food preparation process; monitor the quality and quantity of the received food.Dish quality and development: Proficiently master Cantonese cooking techniques, deeply understand the characteristics of ingredients; assist in formulating menus and food festivals; actively develop new dishes and study the local catering market.Team management and training: Assist in training staff in various kitchen positions; inspect and evaluate the work of each position; help subordinates improve their skills and provide support for their career development.Cost and safety management: Control the standards of food production, ensure chefs prepare food according to the standard and procedures of the recipe cards; understand cost accounting, knowledge of food raw materials and food nutrition; be responsible for hotel food hygiene, safety and food quality.
