Key Responsibilities
岗位职责:
1、Lead the research, development, and menu design for Thai and Southeast Asian cuisines, ensuring authentic flavors and consistent quality.
负责泰餐及东南亚菜系的菜品研发、菜单设计,确保口味正宗、品质稳定。
2、Master classic Thai dishes as well as innovative culinary techniques, maintaining a balance between traditional tastes and localized creativity.
掌握经典泰餐及创新菜品的烹饪技术,平衡传统风味与本地化创新。
3、Develop and implement standardized operating procedures (SOPs) for all menu items to guarantee consistent execution across every service.
制定菜品标准化流程(SOP),确保出品一致性。
4、Oversee daily kitchen operations, including staff scheduling, on-the-job training, performance evaluations, and team building.
全面负责厨房日常运作,包括人员排班、技术培训、绩效考核及团队建设。
5、Enforce strict kitchen hygiene and food safety standards, ensuring full compliance with regulations such as HACCP.
监督厨房卫生及食品安全,严格执行食品安全法规(如HACCP体系)。
6、Supervise all kitchen stations to maintain safety, cleanliness, and proper equipment operation at all times.
督导各岗位操作规范,确保厨房安全、卫生及设备正常运转。
7、Precisely manage food cost control, including ingredient procurement, gross profit margins, and waste reduction to maximize operational efficiency.
精准管控食材采购成本、毛利率及损耗率,合理控制食品成本。
8、Regularly monitor market trends, competitor activities, and guest feedback to continuously develop new, innovative dishes.
定期了解市场趋势、竞争对手情况及宾客意见,不断研制创新菜式。
9、Adjust menus seasonally and respond to customer preferences to enhance the restaurant‘s competitive edge in the market.
根据季节或顾客反馈优化菜单,提升餐厅市场竞争力。
Job Requirements
岗位要求:
1、Deep expertise in Thai cuisine, with thorough knowledge of Thai herbs, spices, and traditional cooking techniques.
精通泰国菜系,熟悉泰国香料使用及传统烹饪技法。
2、Strong creative ability in menu innovation, capable of developing new dishes that align with the brand’s identity and implementing them through standardized processes.
具备菜品创新能力,能结合品牌调性研发新菜色并实现标准化。
3、Minimum 5 years of experience as a Head Chef or Chef de Cuisine specializing in Thai or Southeast Asian cuisine. Experience studying or working in Thailand, or previous roles in well-established Thai restaurants, is highly preferred.
5年以上泰餐或东南亚菜系主厨/厨师长工作经验,有泰国学习/工作经历或知名泰餐厅工作经验者优先。
4、Previous management experience in a chain Thai restaurant or high-end social dining environment is strongly preferred.
具备连锁泰餐或高端社会餐饮厨房管理经验者优先。
