岗位职责:
1. Be in charge of R&D and put forward new varieties and promotion plan to the management for approval;
主管整个部门的菜品研发,向管理层提出及申请新品种及推广方案的批准;
2. Fully responsible for the daily operation management of Chinese kitchens, formulate various rules and regulations, operation procedures and hygiene standards for the kitchen, ensure the efficient, orderly and safe operation of the kitchen, and comply with fine dining catering
hygiene and safety standards;
全面负责中厨房的日常运营管理,制定厨房各项规章制度、操作流程及卫生标准,确保厨房高效、有序、安全运转,符合高端餐饮卫生与安全规范;
3. Responsible for kitchen cost control, reasonably plan the amount of ingredients, optimize the matching of ingredients, reduce food waste, control the dish cost rate within the scope specified by the group, and achieve the balance between quality and cost;
负责厨房成本管控,合理规划食材用量,优化食材搭配,减少食材浪费,控制菜品成本率在集团规定范围内,实现品质与成本的平衡;
4. Cooperate with the group's brand promotion work, participate in the publicity and tasting activities of Chinese food dishes, show the cooking skills and quality of the group's Chinese food, and enhance brand awareness and reputation;
配合集团品牌推广工作,参与中餐菜品的宣传、品鉴活动,展示集团中餐的烹饪技艺与品质,提升品牌知名度与美誉度;
5. Communicate and order the food and products required to complete all tasks;
沟通和订购完成任务所需的食品和产品;
6. Responsible for taking notes and documenting all important specifications of the outlet as dictated by the standard operating procedures, so that consistency can be enforced;
负责记录标准操作程序所规定的餐厅的所有重要规范,以确保一致性;
7. Provide leadership training and hands-on management of the team members. Responsible for hiring, training a team to achieve the goals of the department within the monthly labor budget。
为团队成员提供领导力培训和实践管理,负责招募、培训团队,在每月的人工预算内实现部门目标。
岗位要求:
1. Minimum of 3 years’ management experience in similar position, 5 years of fine dining restaurants in international luxury hotels, Michelin or Black Pearl standard;
同等职位3年或以上的管理经验,至少5年在国际奢华酒店,米其林黑珍珠标准Fine Dining餐厅工作经验;
2. Proficiency in using purchasing system and regular office software;
熟练使用采购系统和日常办公软件;
3. Good teamwork spirit and sense of innovation;
有良好的团队合作精神和创新意识;
4. Leadership, management and training skills with costing, ordering knowledge;
具备领导才能及管理、培训技巧,成本控制和订货能力;
5. Can work under pressure and long hours.
能适应高压力和长时间的工作环境。
