工作职责
1. 确保餐具的清洁、充足和良好的状态,满足餐厅运营需求。
2. 管理和维护厨房及餐厅的各种设备,安排定期维修和保养。
3. 负责餐具和设备的采购计划和预算控制。
4. 建立和监督执行严格的清洁和卫生标准,包括厨房、餐厅、仓库等区域。
确保符合卫生法规和食品安全标准,预防和处理卫生问题。
5. 监控餐具、清洁用品和其他相关物品的库存水平。
6. 制定并执行库存补充计划,控制库存成本。
7. 合理安排人力、物力资源,以降低运营成本。
8. 控制清洁用品和设备维修等费用的支出。
9. 与厨房、餐厅和其他部门保持密切沟通和协调,确保工作流程顺畅。
10. 及时处理相关部门提出的问题和需求。
11. 检查餐具的清洁质量和设备的维护状况。
12. 不断改进工作流程和方法,提高工作效率和质量。
13. 确保员工在工作中的安全,制定并执行安全操作程序。
14. 防止事故和安全隐患的发生。
15. 负责部门的各类文档、记录的整理和保存,如库存记录、设备维修记录、员工考勤记录等。
16. 处理突发事件,如餐具短缺、设备故障等,确保餐厅正常运营不受影响。
Job responsibilities
1. Ensure that the tableware is clean, adequate and in good condition to meet the operational needs of the restaurant.
2. Manage and maintain all kinds of kitchen and restaurant equipment, arrange regular repair and maintenance.
3. Responsible for tableware and equipment procurement plan and budget control.
4. Establish and monitor strict standards of cleanliness and hygiene, including in kitchens, dining rooms, warehouses, etc. Ensure compliance with health regulations and food safety standards, prevent and deal with health problems.
5. Monitor stock levels of cutlery, cleaning supplies and other related items.
6. Develop and implement inventory replenishment plan to control inventory cost.
7. Reasonable arrangement of human and material resources to reduce operating costs.
8. Control expenses such as cleaning supplies and equipment maintenance.
9. Maintain close communication and coordination with kitchen, dining room and other departments to ensure smooth work flow.
10. Timely deal with questions and needs raised by relevant departments.
11. Check the cleaning quality of tableware and the maintenance status of equipment.
12. Continuously improve work processes and methods to improve work efficiency and quality.
13. Ensure the safety of employees at work, develop and implement safe operating procedures.
14. Prevent accidents and safety hazards.
15. Responsible for the arrangement and preservation of various documents and records of the department, such as inventory records, equipment maintenance records, staff attendance records, etc.
16. Handle emergencies, such as tableware shortage, equipment failure, etc., to ensure the normal operation of the restaurant is not affected.
具有国际性酒店同岗位工作经验优先
International hotel experience in the same position is preferred
