Located in thecenter of Pearl River New City, The Ritz Carlton, Guangzhou is a luxurydestination in the Southern China hub. TheRole of Director of Food and Beverage
Functionsas the strategic business leader of the hotel food and beverage/culinaryoperation, including all Food and Beverage Outlets including Lai Heen ChineseRestaurant, LIMONI Western Restaurant, FOODS All Day Dining Restaurant, TheChurchill Bar, Pearl Lounge, In Room Dining, all function rooms and off-sitecatering. Position oversees the development and implementation of departmentalstrategies and ensures implementation of the brand service strategy and brandinitiatives. The position ensures the food and beverage/culinary operationmeets the brand’s target customer needs, ensures employee satisfaction, andfocuses on growing revenues and maximizing the financial performance of thedepartment. Develops and implements property-wide strategies that deliverproducts and services to meet or exceed the needs and expectations of thebrand’s target customer and property employees and provides a return oninvestment.
Key Functions
Ensurethe profitability, efficiency and creativity in each Food and Beverage outletsincluding restaurants, bars, banquet functions, outside catering events andin-room dining;
Partnerwith PR & Marketing team to increase exposure and coverage of the Food& Beverage outlets in various local and international media andcontinuously drive Dining Experience Reputations in the market. Have strong PRskill to push F&B Promotion.
Workwith Quality Leader to achieve Guest Voice, Social Platforms, Forbes, BSA andLQA Audit K Goal every year.
Knowledgeablein OTA, Meituan, Dianping, and all the media platforms, consistently identifiesopportunities to enhance profitability and create value by challenging existingprocesses, fostering innovation, and driving successful promotional strategies.
Workclosely with Executive Chef to maintain HACCP standards.
Planmenus, prices and promotional events for all Food & Beverage outlets inorder to maximize revenue generating opportunities;
Identifyareas for improvement in service and food & beverage quality by reviewingvarious service quality audit reports, guest feedback from various channels aswell as guest incident reports, and formulate action plans;
Stayattentive to market trends in culinary arts, beverages and service style inorder to induce creativity in the operation; Manage Food & Beverage outletsconcept changes and renovations as well as the annual CAPEX handling;
Maintaina team of well-trained and motivated colleagues in order to deliver a highlevel of service according to Group’s and international luxury hotel standards;
Meetand greet all VIPs and influential clients and ensure there is follow-up on alldiscussed details;
Bepart of the Guidance Team and provide advice and support in decisions andprojects relating to the entire hotel.
Workclosely with all related departments within the hotel to maximize collaborationand efficiency.
Tobe aware of and comply with all F&B license related matters.
Toreport any defects in the building or equipment according to the Hotelprocedures.
Toensure any related accidents to colleagues, guests or visitors are reported inaccordance with Hotel procedures.
Providesupport to Human Resources in selecting, training and developing the bestLadies and Gentlemen. Build effective teams, and provide comprehensivedevelopment and succession plans for the division. Introduce effective trainingprogram across the division.
Assuresthat financial goals of the division and the hotel are being met. Monitors andcontrols labor expense, and other divisional expenses such as food, beveragesupplies and equipment. Works closely with Culinary, S&M and Finance to maximizeF&B revenue. Assists in preparing business forecasts. Prepares AnnualBudget for the division.
Education andExperience
HighDiploma or Degree holder in Hospitality Management.
Minimum10 years’ relevant working experience in a 300 to 400 room size luxury hotelwith at least 5 years in similar capacity in China.
Beverageupsell skill is mandatory. Minimum 10 years of age to serve alcohol beverages.
Seniorleader with broad experience in Chinese Restaurant, All Day Dining and BanquetEvent.
Opento both Chinese and foreigner willing to accept a local compensation package.
Knowledgeableof Food & Beverage in All Day Dining, Fine dining, Chinese restaurant andConference & Banqueting operations and skills.
Passionfor Food & Beverage and customer service; clear focus on the customer needsand trends in order to meet customer satisfaction; and creativity and flair toexceed customer expectation.
Provenrecord in managing F&B projects; good knowledge of financial statement andexperience in budgeting.
Excellentleadership skills and mastery in delegating multiple tasks.
Demonstratethe highest level of hospitality and professionalism with guest-oriented andservice-minded.
Proactive,well-organized, detail-minded with excellent communication and interpersonalskills and can work independently under pressure.
Excellentcommand of English, Chinese and Cantonese would be a plus,  and hands-onexperience in MS Office applications.
HACCPcertification is required

CustomerService Excellence: Exceptional skills in managing guest experiences, handling F&Bcomplaints, and ensuring guest satisfaction. Stays aware of market trends andintroduces new food and beverage products to meet or exceed customerexpectations, generate increased revenue and ensure a competitive position inthe market.
Communication:Strong verbal and written communication skills, capable of effectiveinteraction with guests, staff, and external stakeholders.
Problem-Solving:Proficiency in identifying problems, analyzing potential solutions, and makingdecisive, effective decisions.
OrganizationalSkills: Aptitude for managing multiple tasks and priorities, scheduling, andensuring smooth operations across different departments.
Attention toDetail: A keen eye for detail, ensuring all aspects of F&B and facilitypresentations meet or exceed hospitality standards.
Adaptability:The ability to adapt to changing situations, guest needs, and industry trends,often with a proactive approach to innovation and improvement.
