【Job Responsibilities 岗位职责】
Take overall charge of daily operation and management of the Chinese kitchen.
全面负责中餐厨房的日常运营与管理。
Ensure the taste, quality and plating of dishes meet hotel standards.
确保出餐品质、口味及摆盘符合酒店标准。
Lead the R&D and innovation of Chinese dishes.
主导中餐菜品的研发与创新。
Develop new menus regularly by integrating local Zhoushan specialties and seasonal ingredients.
结合舟山本地特色及季节性食材,定期推出新菜单。
Formulate and implement kitchen operating procedures and hygiene standards.
制定并执行厨房各项操作流程与卫生规范。
Make sure all work complies with food safety management system requirements.
确保符合食品安全管理体系要求。
Supervise raw material receiving, inspection, storage and cost control.
监督食材采购验收、仓储及成本控制。
Reasonably maintain gross profit margin and reduce food waste.
合理把控毛利率,减少损耗。
Arrange shifts, conduct skill training and performance appraisal for kitchen staff.
负责厨房团队的人员排班、技能培训及绩效考核。
Improve the overall professional competency of the team.
提升团队整体专业水平。
Cooperate with restaurant, banquet and event departments.
协同餐厅、宴会及活动部门。
Fulfill customized dish requirements for grand banquets and VIP guests.
配合完成大型宴席及重要客户的个性化菜品需求。
Inspect kitchen equipment maintenance and safety conditions on a regular basis.
定期检查厨房设备维护与安全状况。
Handle emergencies promptly to guarantee safe production.
及时处理突发问题,保障安全生产。
【Job Requirements 岗位要求】
Master at least two Chinese cooking techniques (hot dishes, cold dishes, dim sum, etc.).
熟练掌握中式烹饪技法(热菜、冷菜、面点等至少两项)。
Capable of independently developing new dishes.
具备独立研发新菜能力。
Have experience in kitchen team management.
具备厨房团队管理经验。
Able to arrange work allocation and boost team execution efficiently.
能有效组织分工并激发团队执行力。
Familiar with food safety regulations and kitchen cost accounting.
熟悉食品安全法规及厨房成本核算方法。
Practical experience in cost control is required.
有成本控制实际经验。
Possess strong communication and coordination skills.
沟通协调能力强。
Cooperate efficiently with other departments and adapt to hotel heavy workload.
能与其他部门高效配合,适应酒店高强度工作节奏。
Candidates with valid health certificate and chef vocational qualification certificate are preferred.
持有健康证及相应厨师职业资格证书优先考虑。
