reservations are maximised within the restaurant in liaison with Reception and
the central reservations team.

a comprehensive knowledge of the menu and an understanding of the wine list up selling
to guests when appropriate.

communicate with the kitchen regarding menu changes, availabilities and
specials.

relevant reporting and analysis of the outlet to ensure cost effective goals
are being met and surpassed.
