【岗位职责】
1.全面负责酒店中厨房的整体运营管理工作,与行政总厨制定中厨房发展战略。
2.负责与行政总厨制定中餐菜品的研发和创新,打造酒店中餐特色品牌。
3.制定中厨房菜单体系,控制菜品质量和成本,确保餐饮品质。
4.负责中厨房团队建设和人才培养,提升团队专业水平。
5.建立和完善中厨房管理制度和操作规范,确保食品安全和卫生。
6.协调中厨房与餐厅之间的工作,确保中餐服务顺畅
7.根据业务和酒店的需要,随时增加的其他职责和任务。
【Job Responsibilities】
Overall responsibility for the operation and management of the hotel's Chinese Kitchen, and formulate development strategies for the Chinese Kitchen together with the Executive Chef.Responsible for developing and innovating Chinese cuisine menus together with the Executive Chef, to build the hotel's Chinese cuisine brand identity.Develop the Chinese Kitchen menu system, control food quality and costs, and ensure culinary excellence.Responsible for Chinese Kitchen team building and talent development to enhance professional standards.Establish and improve Chinese Kitchen management systems and operational standards to ensure food safety and hygiene.Coordinate between the Chinese Kitchen and the restaurant to ensure smooth Chinese cuisine service.Other duties and tasks as assigned based on business and hotel needs.
【岗位要求】
1.高中及以上学历,中餐烹饪相关专业,具有高级厨师资格证书。
2.10年以上高星级酒店中厨房管理经验,其中至少4年以上中餐行政总厨岗位经验。
3.精通中餐烹饪技艺,尤其是粤菜、京菜或鲁菜等特色菜系,具备丰富的中厨房管理经验。
4.具有卓越的领导力和团队管理能力,具备良好的成本控制意识。
5.具有较强的菜品创新能力和市场洞察力,能够引领中餐潮流。
6.年龄45周岁及以下,身体健康,无传染性疾病,条件优秀者可适当放宽。
7.有知名中餐厅或高星级酒店中厨管理经验者优先。
8.具备极强的责任心,对中餐菜品品质和厨房卫生安全严格负责。
【Job Requirements】
High school diploma or above, major in Chinese culinary arts, with Senior Chef Certificate.Minimum 10 years of Chinese Kitchen management experience in luxury hotels, including at least 4 years as Chinese Executive Chef.Mastery of Chinese culinary techniques, especially Cantonese, Beijing, or Shandong cuisines; extensive Chinese Kitchen management experience.Excellent leadership and team management skills with strong cost control awareness.Strong dish innovation capability and market insight, able to lead Chinese cuisine trends.Age 45 or below, in good health, free from infectious diseases; exceptional candidates may be considered flexibly.Experience in well-known Chinese restaurants or luxury hotel Chinese kitchens preferred.Strong sense of responsibility with strict commitment to Chinese cuisine quality and kitchen hygiene safety.
