MAJOR RESPONSIBILIES 责任概要 :
To provide consistent quality of food and services to internal and external customers, by adhering to and enforcing all Marriott Standards and Policies; training and guidance of trainees and attendants.

SPECIFIC DUTIES 工作任务 :
1. Supervises Chinese & Banquet Kitchen preparation shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
监督中餐及宴会厨房生产运营,确保执行所有关于餐饮的政策,标准及程序。
2. Assists Chinese & Banquet Kitchen Chef and Executive Chef with kitchen operations as necessary.协助中餐及宴会厨房厨师长及行政总厨维持厨房的运营。
3. Supervise and coordinate activities of cooks.
监督和协调厨师的工作。
4. Assist cooks and kitchen staff with various tasks.
协助厨师和厨房工作人员完成各种任务。
5. Provide cooks with needed items.
为厨师提供所需物品。
6. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
根据食谱、质量标准、呈现标准以及食品准备清单来准备和烹饪食物。
7. Prepare cold foods.
准备冷食。
8. Prepare special meals or substitute items.
准备特殊餐点或替代品。
9. Determine how food should be presented using the BEO and create decorative food displays.
确定食物的呈现方式,使用BEO进行设计,并创建装饰性的食物展示。
10. Assist with Banquet plate-ups.
协助宴会上的摆盘工作。
11. Communicate any assistance needed during busy periods to the Chef.
在繁忙时期,向厨师沟通任何所需的协助。
12. Ensure proper portion, arrangement, and food garnish to be served.
确保提供适当的分量、摆放和食物装饰。
13. Monitor the quality and quantity of food that is prepared and the portions that are served.

14. Prepare proper plate and platter presentations for banquets.
为宴会准备合适的盘子和大盘展示。
15. Set up and operate action stations for banquet or buffet.
设置并操作宴会或自助餐中的活动站。
16. Carve buffet meats as requested by guests.
根据客人的要求,对自助餐中的肉类进行切割。
17. Support banquet and buffet by ensuring adequate stock of all items.

18. Monitor stock of kitchen supplies and food.

19. Inform Food & Beverage service staff of menu specials and out of stock menu items.

20. Maintain kitchen logs for food safety program and food products.
维护厨房日志,以确保食品安全计划和食品产品的安全。
21. Ensure the quality of the food items and notify manager if a product does not meet specifications.

22. Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, and motivating and coaching employees.
协助管理层进行招聘、培训、调度、评估、劝导、纪律处分以及激励和指导员工。 23. Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications.
遵循所有公司以及安全和安保政策和程序;向经理报告维护需求、事故伤害以及不安全的工作条件;完成安全培训和认证。
24. Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.
确保制服和个人形象干净且专业,维护专有信息的保密性,保护公司资产。
25. Address guests’ service needs.
满足客人的服务需求。
26. Speak with others using clear and professional language.
用清晰和专业的语言与他人交流。
27. Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees.
发展与他人之间的积极工作关系;支持团队实现共同目标;倾听并适当地回应其他员工的关切。
28. Ensure adherence to quality expectations and standards.
确保遵守质量期望和标准。
29. Perform other reasonable job duties as requested by Supervisors.
