MAJOR FUNCTION 主要功能 :
To administer the day to day operations ofthe restaurant outlet in such a manner as to maximize revenues and minimizecosts with particular attention to complete guest satisfaction, associatewelfare, and profit margins. To function as the Business Manager and aMarketing Specialist for the Outlet, to ensure that the outlet operatessuccessfully, in accordance with the standard of the hotel and are individuallyprofitable.

MAJOR RESPONSIBILIES 責任概要 :
1.Bedirectly responsible for the restaurant area, ensuring asmooth running, profitable operation within the framework of the hotel.

2.Beresponsible to maintain the overall welfare of ourassociates by providing them with the training and resources to take care ofour guests.
确保员工的各种福利,提供员工职业培训和各种资源,以实现更好的服务。
3.Toachieve departmental budget goals by maintaining profitsthrough increased sales revenue and the efficient cost expenditure.
实现部门的预算指标。通过激增销售,合理支出,来获得利润。
4.Be responsible for themonthly department Profit & Loss Statement.
负责部门的月度赢亏报表。
5.To assist the director of food and beverage management, supervision ofthe restaurant, bar, work department, the daily work of the kitchen, to ensurethe quality of the work of the high quality standards.
协助餐饮总监管理、督导餐厅、酒吧、管事部、厨房的日常工作,保证各点高质量的工作水准。

OPERATIONS
1.Preparation of the yearlydepartment budget by using history & forecasting techniques to develop anaggressive budget that reflects the achievable capabilities.

2.Accurately forecastbusiness demands to ensure efficient staffing & food production.

3.To ensure the efficientscheduling of supervisors & associates.

4.To ensure the awareness& enforcement of all Marriott S.O.P.’s & Property L.S.O.P.’s.

6.Be responsible formaintaining outlet safety and sanitation standards at all times.

7.Enforce Marriott’s GFSchecklist by having all outlets inspected on a monthly basis.
执行万豪酒店的GFS点卫生标准,每月对所有的部门进行卫生检查。
8.Be responsible for assetmanagement of all outlet property & facilities.
负责所有部门的物品和设施的财产管理。
9.Conduct a preventativemaintenance inspection on a weekly basis.
每月对所有部门进行卫生清洁维护的检查。
10.Enforce Marriott’sPrinciples of Hospitality at all times.
遵守万豪宾馆的员工行为准则。
11.Responsiblefor the wide collection of guest comments and suggestions, reasonable handlingguest complaints, and the organization of the adjustment of the managementsystem, work procedures and to be implemented.

HUMAN RESOURCES
1.Todevelop and implement management training plans forsubordinate managers and supervisors on a quarterly basis in conjunction withHRD. Also initiates development plans for hourly associates and follows up ontheir progression.
以每季度为基准,与人事部门主管联系,开展和实施部门经理和管理人员的管理培训计划。
2.Toimplement a departmental daily “15 Minute” training program.
每日进行15分钟的职业培训课程。
3.Be responsible for theexecution of all associate performance reviews in a professional and timelymanner.

4.Be responsible for allaspects of associate management including hiring, discipline in conjunctionwith Department Head.

6.To supervise the completion& critique of the wage progress report on a weekly basis.

7.Topractice “Open Door” policy to all associates.

8.To assist in the development and supervision of the implementation ofthe training plan.

ADMINISTRATIVE
1.Be responsible for all accounting and billing procedures in theoutlets.
负责部门的财务和支出费用。
2.Be responsible for the accurate supervision of the associate timecontrol and payroll systems by working with Accounting and HR.
与财务和人力资源部协作,共同负责员工的工作时间和工资系统的管理。
3.Periodically plan outside associate activity to promote teamwork.
安排员工的外部活动事项,促进团队合作。
4.Promote positive inter-departmental relations through candidcommunication and cooperation.

5.Respond to guest inquiries or concerns within 24 hours in what isdeemed the appropriate manner.

6.Perform any reasonable request made of management which is not lifethreatening or against the law.
在不涉及生命威胁,不违反法律的情况下,可以相应的执行能改善管理的合理要求。
7.Responsible for restaurant, bar, work, the coordination between thekitchen and other related departments of communication and cooperation, inparticular, to coordinate the relationship between the front desk and kitchensupply, improve work efficiency, reduce unnecessary errors.
负责餐厅、酒吧、管事部、各厨房之间的协调工作及与其他相关部门的沟通合作,尤其是协调好前台服务和厨房供应的关系,提高工作效率,减少不必要的差错。
MARKETING
1.Be aware of all Marriott Guest Incentiveprograms and the correct accounting procedures pertaining to them.
知道所有万豪客户激励项目并了解相关的顾客结帐方式。
2.Develop & execute plans and actions forthe marketing of the outlet. Works with the Director of Restaurants strategizenew initiatives.
开展和完成该部门作出的市场计划。
3.Be aware of competitors inthe market & complete a competition analysis on a quarterly basis.
了解市场中的竞争对手,并完成每季度的竞争对手分析数据
FINANCIAL
1.Maximises employeeproductivity through the use of multi-skilling, multi-tasking and flexible schedulingto meet the financial goals of the business as well as the expectations of theguests.

2.Focuses attention onimproving productivity levels and the need to prudently manage utility/payrollcosts within acceptable guidelines ensuring optimum deployment and energyefficiency of all equipment.

3.Ensures that the outlet isoperated in line with maximising profit while delivering on the brandpromise.

4.Achieves the monthly andannual personal target and the outlet’s revenue.

5.Assists in the preparationof the Annual Business Plan for Food and Beverage.

6.Assists in the monthlyre-forecasting, involves the respective Department Heads as appropriate.

7.Ensures that all hotel,company and local rules, policies and regulations relating to financial recordkeeping, money handling and licensing are adhered to, including the timely andaccurate reporting of financial information

8.Assists in the inventorymanagement and ongoing maintenance of hotel operating equipment andother assets.

9.Manages costs proactivelybased on key performance indicators, works with the respective Department Heads as appropriate.

4.Ensures new technology andequipment are embraced, improving productivity whilst taking work out of thesystem.
