职位描述 Job Description
1、负责备餐厨房日常整体运营工作,统筹每日食材预处理、半成品加工及备货工作,合理安排班组人员分工。
In charge of daily operation of the commissary kitchen, arrange food prepping, semi-finished product processing and daily stocking, and allocate team work reasonably.
2、把控食材预处理品质、份量及出品标准,严格管控食材损耗,做好库存食材盘点、整理及先进先出管理。
Control the quality, portion and standard of prepped ingredients, strictly manage food loss, conduct inventory checking and follow the FIFO principle for stock management.
3、监督执行厨房食品安全、卫生消杀及操作规范,保障备餐区域环境卫生、设备工具整洁完好。
Supervise the implementation of food safety, hygiene disinfection and operating standards, ensure a clean and tidy working area and well-maintained kitchen equipment.
4、配合后厨整体工作安排,对接各岗位备餐需求,及时处理备餐过程中的问题,做好班组日常管理及工作交接。
Cooperate with overall kitchen scheduling, coordinate prepping demands of each station, solve on-site operational problems, and complete daily team management and shift handover.
任职条件 Criteria:
1、熟悉酒店/餐饮备餐厨房运作流程,掌握各类食材预处理、半成品加工标准,具备相关后厨领班工作经验。 Familiar with hotel and catering commissary kitchen workflow, proficient in ingredient prepping and semi-finished food production standards, with relevant supervisory experience.
2、熟知食品安全卫生规范,具备基础成本管控、人员管理能力,能合理统筹日常备餐工作。Well-versed in food safety regulations, capable of basic cost control and team management, and able to arrange daily prepping work efficiently.
3、工作认真负责、执行力强,服从管理,具备良好的沟通能力和团队协作意识,能适应后厨轮班工作。 Hardworking, responsible and executive, obedient to management, with good communication and teamwork skills, able to work kitchen shift schedules
4、持有有效健康证,无不良从业记录,能熟练操作各类厨房基础设备。Hold a valid health certificate with no bad working records, and be skilled in basic kitchen equipment operation.
