MAJOR RESPONSIBILIES 责任概要 :
To Assist Demi Chef de Partie in the daily operation to produce high quality products to their best knowledge, to follow hotel policies and procedures and work practice.

SPECIFIC DUTIES 工作任务 :
1. To work as directed from his or her supervisors
认真完成主管交办的工作。
2. Determine how food should be presented using the BEO and create decorative food displays.
确定食物的呈现方式,使用BEO进行设计,并创建装饰性的食物展示。
3. Prepare special meals or substitute items.
准备特别的餐点或替代品。
4. Assist with Banquet plate-ups.
协助宴会上的摆盘工作。
5. Communicate any assistance needed during busy periods to the Chef.

6. Ensure proper portion, arrangement, and food garnish.
确保食物的分量、摆盘以及装饰品的恰当性。
7. Monitor the quality and quantity of food that is prepared and the portions that are served.

8. Prepare proper plate and platter presentations for banquets.

9. Set up and operate action stations for banquet or buffet.
设置并操作宴会或自助餐中的活动站。
10. Carve buffet meats as requested by guests.
根据客人的要求,对自助餐中的肉类进行切割。
11. Support banquet and buffet by ensuring adequate stock of all items.

12. Operate ovens, stoves, grills, microwaves, and fryers to prepare foods.

13. Prepare ingredients for cooking, including portioning, chopping, and storing food.

14. Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.

15. Prepare cold foods.

16. Follow all company policies and procedures, including safety and security; report accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications.

17. Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.

18. Speak with others using clear and professional language and answer telephones using appropriate etiquette.
